Once again, I found a spectacular deal on local Apples and just had to put another recipe to the test!  You might remember a couple weeks ago I put together the 15 Minute Baked Apple Cinnamon Roll Ups Recipe.  If you haven’t already, you have got to try them!  They were very easy, only require a couple of ingredients and just take 15 minutes total to make!  Oh! And they are amazing for breakfast OR dessert….does it get any better than that?!

This week’s apples were the cutest little things.  At about 2 inches in diameter, it would take a bunch of them to make a large apple based dessert so I took a moment to think about what else I could make with them.  Then it popped into my head!  Apple pancakes…but not traditional apple pancakes with little chopped up pieces (although those are quite tasty too), rather, apple rings dipped in pancake batter….Apple Cinnamon Pancake Rings!  I had never tried this recipe prior so I did have quite a few failed attempts before I got it just right.  But I’m only human, right?

All you really need for this recipe is apples and your favorite pancake batter.  I used a heart healthy pancake batter my husband recently purchased.  My first instinct was to make the batter thicker so it would stick to the apple rings.  Nope.. you need it thin enough to drip excess off the apple rings or you will end up with a puffy mess.  I also experimented with the thickness of the apple slices and realized that thinner is better.  With thick slices, the batter fell off and did not cover the sides of the rings at all, not to mention the apples did not soften as much.  All in all, it was a fun learning experience and I really loved the delicious turnout once I perfected the recipe!

 

What you need:

Pancake batter

Apples

Cinnamon (optional)

Syrup or powdered sugar (optional)

Step 1:  Prepare by slicing your apples in thin rings.  By thin, I don’t mean paper thin but I mean as thin as you are comfortable slicing them by hand.  If you don’t have a lot of time or patience to do so, you can simply slice your apple in the other direction, as though you were going to just eat it.  Remember to cut out the center and seeds.

Step 2: Add 1 tablespoon of cinnamon to the batter.  Dip apple slices into batter.  Let excess batter drip off.  Remember, your battery needs to be thin enough for this or they will just be one big mess in the pan.

Step 3: Quickly place apple ring covered in pancake batter in your pan at the temperature you normally cook pancakes at; usually low to medium heat.  If you prefer a frying method, you can turn the heat up to medium/high and drizzle a bit of olive oil on the pan before laying the apple pancake ring on it.

Step 4: Cook apple pancake ring until pancake batter is done and remove from pan.

Step 5: Serve with syrup or powdered sugar.

 

Tips and Tricks:

Whether you peel your apples or not is up to you.  I did not feel it was necessary because the skin softens as the apple cooks but it is up to personal preference.

When reheating apple cinnamon pancake rings, I found that microwaving them worked great.

The cooking temperature is all dependent upon your pancake mix.  Just cook your apple pancake rings the same as you normally would regular pancakes and you should be good to go!

The amount of apples and pancake mix is dependent upon how many rings you intend to make.  I stuck to the smallest serving on the box which took about 4 small apples, or probably 2 regular sized apples.  Again, it is all dependent upon how many you intend to make.

I found that it was delicious to add a thin layer of butter and granulated sugar to the top of them!  What is your favorite variation of topping for apple cinnamon pancake rings?
