Whites with fresh grassy aromas and a hint of summer fruits will go great with light canapés, as well as other summer salads and delicate fish starters.

Smoked Salmon Canapés with Cream Cheese 

This recipe serves 12 

Preparation time is around 10 minutes 



800 g smoked salmon 

Small round slices of pumpernickel bread 

4 tbsp crème fraîche 

2 8oz. tubs of cream cheese 

Lemon juice and zest from 4 large lemons 

2 bunches of dill, finely chopped 

black pepper 



1. In a large bowl, combine the crème fraîche, cream cheese, lemon juice, half of the lemon zest, dill, and a pinch of black pepper. 

2. On two serving trays, place the small round slices of pumpernickel bread. Place an appropriate amount of cream cheese filling on top of each. 

3. Slice up the smoked salmon and twist the slices, then place on top of the bread crisps. 

4. Garnish with sprigs of dill, then top with lemon zest. 


Another general rule on wine pairings is to match up reds with dark meat, and whites with seafood. An exception can be made, however with lighter reds and stronger whites; delicate reds may be paired with rich seafood dishes and strong whites can actually go well with meat.  

So, if you’re feeling a bit more adventurous, you can try a light red wine to complement your salmon canapés.
