Got a Case of the Mondays? Fix it with Sundaes! #SundaeFundae

When you've got a case of the Mondays, make it a Sundae Fundae!

 

Ever have one of those days?  One of those days where everything seems to be a little off?  We all have days like that.  We woke up late, the kids won’t cooperate getting ready, someone’s teething, someone else is sick, and nothing seems to go smoothly at all.  It’s no wonder that grumpy orange cat hates Mondays so much!  Finding a small routine for your family to enjoy together can relieve a lot of that stress.  For our family, one of our routines is turning any day into a Sundae!

Instead of just scooping out a little ice cream and handing it out, or going to the ice cream shop, we keep a collection of toppings in the pantry.  When it’s time for some family fun, and we’re in the mood for a treat, we pull out our favorite toppings and every flavor of ice cream we have to make a tasty frozen buffet!  The kids love being able to choose what goes in, even if it’s a little unconventional!  Small spoonfuls of each type of ice cream, gummy bears or candy pieces, sprinkles, peanut butter… Or more conventional and delicious toppings like Smucker’s Marshmallow, Caramel, and Fudge toppings!

On our most recent Sundae, the kids worked together and got two scoops of vanilla bean ice cream topped with Smucker’s Marshmallow topping and colorful candies.  One of their simpler creations, and they loved it!  Mommy couldn’t wait to join in and made a Hot Fudge sundae with cookie crumbles!  No worries about jealousy either – we had a taste test of everyone’s sundae so we all get to experience the new flavors, and sometimes even vote for whose was the best, most creative, most strange, and other awards.  We make sure to have at least one award for everyone, so none of the kids are left out or feeling bad about their ice cream choices.  There’s no wrong way to ice cream, right?!

 

I could go for a fudge sundae any day!  Mmmm..

I’ve got two tiny little boys and a husband recovering from a heart attack so the hot and humid summer days can really take a toll on our family!  Thankfully, we all share something that cools us down and cheers us up: a love for good ice cream!  We have always kept a container or two in the house, varying flavors constantly to try new and wonderful tastes.

Then my husband had go gluten free and must limit his fat intake for medication; he’s pretty much limited to a low fat or fat free vanilla.  When looking around for alternatives, we stumbled on to Smucker’s ice cream toppings at Kroger!  His options widened with flavors and add-ins, and the whole family got some delicious toppings to sweeten the deal.  Our local Kroger store has a wide variety of syrups and toppings, including multiple flavors that are fat free, some sugar free, even gluten free!  For families with different needs, currently many are free of peanuts, dairy, and soy as well!  We are always keeping an eye out for us and for friends and family who have allergies or dietary restrictions, and it seems Smucker’s is keeping an eye out for us too.

My husband’s favorite toppings are Smucker’s Butterscotch Syrup and the Pineapple Spoonable Topping.  I’m not crazy about pineapple, but I love the Funfetti Vanilla Cake Magic Shell.  The shell hardens as it cools on your ice cream, making a delicious crunchy coating that can’t be beat.  The kids tried a little bit and really liked the Marshmallow Spoonable Topping.

Hawaiian Inspired Recipe: Kalua Chicken

Remember that time you bought a package of food and absolutely LOVED it, so you get a craving and rush out to buy another package?  You get home, get everything put away, sit down to enjoy your food… and it’s nowhere near as good as the first time!  This has happened to me all too often, so I am grateful when I find a brand with good taste AND consistent quality like Zaycon Fresh.

I wrote a review of Zaycon Foods’ chicken breasts last year, and decided to try them again to see how consistent our local products actually are.  While they may have changed their name, the products are still the same…and as great as ever!  The chicken came as quick and easy as before, taking less than three minutes to pick up from the delivery truck.  Very convenient – I was able to stop by the event after picking my son up from Pre-K.  The chicken breasts were very large, clean, and well packaged.  Suffice to say the quality is amazing, some of the best chicken we’ve ever had and for a pretty great price.  Since the quality and price hasn’t changed since my last review, I’m going to focus on one of our favorite recipes for the chicken!

Kalua Chicken with rice and pineapple - an easy alternative to the Hawaiian Kalua Pig recipe my family brought back to the mainland!

 

My husband’s family has a long history with Hawaii, and he loves Kalua Pig.  So with forty pounds of chicken, and no pork on hand, he made some Kalua Chicken!  Chicken requires a different method than the pork, and the recipe is simple, but the taste is amazing.

 

What you’ll need:

4-6 chicken breasts
1-2tbsp coarse sea salt (preferably pink)
1-2tsp liquid smoke

 

Kalua Chicken recipe (easy to make!)

 

 

Recipe preparation:

Put the chicken breasts in a slow cooker, cover with water, and cook on high for 6-8 hours until the breasts fall apart easily when you try to lift them out of the crock pot.

Remove the chicken and use a fork to gently pull the chicken apart in strips.  Follow the ‘grain’ of the meat to get long strips.

Drain the crock pot, then add the chicken back in.  Add the salt and liquid smoke, mix in gently.

Cook on low for 30 minutes.

Serve!

 

Variations:

My husband likes to mix his with sticky Calrose rice, veggies, chopped pineapple, and a hint of teriyaki or shoyu sauce.  I prefer to keep the chicken and rice separate, with pineapple on the side.  The best part is if you get tired of the leftovers, just add barbecue and stir to get barbecued pulled chicken!

Valentine’s Day Recipe: Gluten-Free “S’more” Cookie Sandwiches

 

Gluten Free Valentine's Day Treat - S'mores Cookie Sandwiches

 

A few weeks ago I wrote about some gluten-free options that are available at Walmart.  While I visited the Gluten-free event at my Walmart, I picked up a package of Glutino chocolate chip cookies.  I do not have a medical need for gluten-free foods, however I know several people who do, including my mother in-law.  I’ve been wanting to create a gluten-free treat that she could enjoy at family potlucks, and these cookies are the perfect start!

As someone who consumes gluten on a daily basis, I had no idea what to expect from the cookies.  As soon as I opened the package, it smelled amazing!  I snuck a bite before working on my recipe and to my surprise, they were some of the best store-bought chocolate chip cookies I’ve had.  They were really good!  Luckily one of my toddlers was napping and the other was at preschool or I may not have had any cookies left to work with ;-)

My kids LOVE marshmallows so we always have some on hand.  Since it’s almost Valentine’s Day, we actually had some cute pink strawberry flavored Kraft Jet-Puffed HeartMallows.  I checked the label and they were gluten-free…perfect!  If you don’t have these specific marshmallows on hand, just about any should do.  Just check the label to ensure they are gluten-free.

This recipe is easy.  It’ll literally take you minutes to prepare and serve.  And it’s a perfect last minute treat for Valentine’s Day!

Simply place one cookie upside down on a plate and center a marshmallow on it.  Set the other cookie next to them and set the plate in the microwave.  For one cookie sandwich, I set the microwave to 8 seconds.  Once the marshmallow puffed up, (right around 7-8 seconds), I opened it and placed the second cookie on top.  I suggest microwaving each sandwich separately if your microwave heats a bit unevenly like mine.

 

Delicious gluten-free Valentine's Day Treat!

 

The cookies will slightly soften, the chocolate chips will begin to melt, and the marshmallow will become gooey goodness, creating an amazing s’more cookie sandwich!  You can serve these immediately as they may be slightly warm, but not hot.
