Minion Inspired Banana Snack Idea (perfect for after school!)

Here's a fun after-school snack - banana peanut butter cracker sandwiches!

I decided to make lunch a little more exciting today!  The kids love having a peanut butter and jelly sandwich with a banana on the side.  Even when I try to fix something else, they insist on the same ol’ thing.  So I thought I’d have some fun and change it up at least a little bit, with a minion inspired idea!

So my kids have only seen Despicable Me once and have not yet seen the new Minions movie but they’re still obsessed with minions.  We were at the doctor’s office last week and my 2 1/2 year old saw a commercial and yelled “Minions!” for everyone around to hear.  It was adorable how excited he was.  I can see it though – those little cute yellow guys are hard not to love!


What fun!  A healthy Minion inspired snack for kids (and adults!)


So here’s the recipe!  Try not to forget.. it’s a hard one to remember ;)  No, but really, I know we all need ideas once in a while, so remember to Pin this for later!


What you’ll need:

  • Crackers
  • Banana – sliced
  • Peanut Butter
  • Fruity Pebble cereal or sprinkles


How to make it:

It’s pretty simple and only takes a couple of minutes.  The kids could even make it themselves!

1) Spread peanut butter on flat side of crackers

2) Add 1 slice of banana per cracker

3) Sprinkle Fruity Pebbles on top



Add jelly between the peanut butter and banana

Skip the fruity pebbles and sprinkles and add chia seeds on top

Sandwich a cracker on top but keep the bananas separate

For those with peanut allergies, use yogurt instead of peanut butter

Got a Case of the Mondays? Fix it with Sundaes! #SundaeFundae

When you've got a case of the Mondays, make it a Sundae Fundae!


Ever have one of those days?  One of those days where everything seems to be a little off?  We all have days like that.  We woke up late, the kids won’t cooperate getting ready, someone’s teething, someone else is sick, and nothing seems to go smoothly at all.  It’s no wonder that grumpy orange cat hates Mondays so much!  Finding a small routine for your family to enjoy together can relieve a lot of that stress.  For our family, one of our routines is turning any day into a Sundae!

Instead of just scooping out a little ice cream and handing it out, or going to the ice cream shop, we keep a collection of toppings in the pantry.  When it’s time for some family fun, and we’re in the mood for a treat, we pull out our favorite toppings and every flavor of ice cream we have to make a tasty frozen buffet!  The kids love being able to choose what goes in, even if it’s a little unconventional!  Small spoonfuls of each type of ice cream, gummy bears or candy pieces, sprinkles, peanut butter… Or more conventional and delicious toppings like Smucker’s Marshmallow, Caramel, and Fudge toppings!

On our most recent Sundae, the kids worked together and got two scoops of vanilla bean ice cream topped with Smucker’s Marshmallow topping and colorful candies.  One of their simpler creations, and they loved it!  Mommy couldn’t wait to join in and made a Hot Fudge sundae with cookie crumbles!  No worries about jealousy either – we had a taste test of everyone’s sundae so we all get to experience the new flavors, and sometimes even vote for whose was the best, most creative, most strange, and other awards.  We make sure to have at least one award for everyone, so none of the kids are left out or feeling bad about their ice cream choices.  There’s no wrong way to ice cream, right?!


I could go for a fudge sundae any day!  Mmmm..

I’ve got two tiny little boys and a husband recovering from a heart attack so the hot and humid summer days can really take a toll on our family!  Thankfully, we all share something that cools us down and cheers us up: a love for good ice cream!  We have always kept a container or two in the house, varying flavors constantly to try new and wonderful tastes.



Then my husband had go gluten free and must limit his fat intake for medication; he’s pretty much limited to a low fat or fat free vanilla.  When looking around for alternatives, we stumbled on to Smucker’s ice cream toppings at Kroger!  His options widened with flavors and add-ins, and the whole family got some delicious toppings to sweeten the deal.  Our local Kroger store has a wide variety of syrups and toppings, including multiple flavors that are fat free, some sugar free, even gluten free!  For families with different needs, currently many are free of peanuts, dairy, and soy as well!  We are always keeping an eye out for us and for friends and family who have allergies or dietary restrictions, and it seems Smucker’s is keeping an eye out for us too.

My husband’s favorite toppings are Smucker’s Butterscotch Syrup and the Pineapple Spoonable Topping.  I’m not crazy about pineapple, but I love the Funfetti Vanilla Cake Magic Shell.  The shell hardens as it cools on your ice cream, making a delicious crunchy coating that can’t be beat.  The kids tried a little bit and really liked the Marshmallow Spoonable Topping.

We finally have a reason to get out the adorable ice cream cups we found a couple years ago, for just this kind of occasion.  I’m going to go make a Marshmallow Hot Fudge shake, while you head on over to Kroger to pick up your new favorite toppings for #SundaeFundae!
